The Queen and Prince Philip visited Kirkcudbright to meet the team from West Coast Sea Products and neighbouring Castle MacLellan Foods, organised by Deputy Lord-Lieutenant of Dumfries, Colin Warden, to demonstrate the success of two local businesses and their contribution to creating a strong local economy.
Her Royal Highness was interested in finding out about the work of all the company and how many local people the company employed.
West Coast Sea Products demonstrated the various stages from sea to plate. After visiting the harbour to watch fishing vessels unload their catch, the Royal party moved to the West Coast Sea Products marquee where members of staff talked them through the process of preparing scallops for export, beginning with a demonstration of shucking .
The Queen and Prince Phillip were then delighted to watch a demonstration by local chef Carlo Bignami preparing Queen Scallops al Cointreau, a dish that he created especially for the occasion.
The day was rounded off with the Royal party being presented with a selection of King and Queen Scallops by Alice King.
